Pancake Day Special!
To mark this day I have made my usual Crêpe style pancakes. Every year I use the same old recipe from my mums hand written recipe book. It is actually a recipe for Yorkshire pudding batter but makes fantastic pancake mix too!
Ingredients:
¼ lb Plain flour (roughly 113g)
1 Egg
1 Tsp sugar (optional)
Method:
1. Sift the flour and sugar into a large bowl, making a hollow in the centre.
2. Add the beaten egg and half the milk to the hollow, beat well with a whisk until the mixture is smooth. Continue beating until bubbles rise in the mixture, incorporate the rest of the milk. Cover and leave to rest for at least 30 minutes.
4.Once the pan is very hot add roughly a tbsp of mixture to
the pan, spreading it out with the back of the spoon or by titling the pan in a circular motion.
5. Use a thin spatula to gently lift it the whole way around, once you can get the spatula the whole way underneath the pancake, lift it and flip over to cook the other side.
6.When bubbles form in the pancake and it appears cooked but still soft, lift from the pan and place on the plate in the warm oven whilst you continue to repeat the process.
Why not try experimenting with your own toppings, even savoury toppings can be good, tonight I made savoury ones using: Bacon,onion,mushroom,tomato,cheese and smashed avocado with chili oil!
